Brown Coconut Rice

Balti Prawn Curry no 2

This recipe serves four people, so if you are cooking it to go with the Balti Prawn Curry for two people just use half of the ingredients. Make sure that you cook it slowly, otherwise the rice will burn. (This goes great with my Balti Prawn Curry - see link above).

  1. Heat the oil in a large frying pan, before adding the rice and stirring it all so that it is all coated by the oil.
  2. Add all of the other ingredients, bring it up to boiling point and add a lid.
  3. Lower the heat, and leave it to simmer for 35-40 minutes until all of the liquid has been absorbed.
  4. Turn off the heat and remove the lid, and then place a clean tea towel over the top to absorb the steam - this makes the rice ‘fluffy.’
  5. Remove the lump of ginger and serve.
